Pork Menudo

Menudo is a traditional stew from the Philippines.

While it has the same name as the Mexican dish of the same name,

it is not made with tripe but rather with sliced pork and liver.







1/2 kilo pork (cut into cubes)
1/4 kilo pork liver (cut into cubes)
1/2 cup soy sauce
4 pcs calamansi or 1/2 pc lemon
1/4 cup cooking oil
3 cloves garlic (chopped)
1 onion (chopped)
2 cups tomato sauce
1 cup water
1 tsp brown sugar
1 cup potatoes (diced)
1 cup carrots (diced)
1 cup red/green bell pepper (diced)
salt & pepper

Marinade pork with soy sauce & calamansi/lemon juice for about 1 hour
Heat a pan & pour in cooking oil
Saute garlic, onion & the marinated pork
Add water & bring to boil then simmer until pork is tender
Add the pork liver, tomato sauce & brown sugar then simmer for 10 minutes
Add the carrots, potatoes & bell pepper then simmer for 5 minutes
Season with salt & pepper to your desired taste
