Sinampalukang Manok is a delicious Filipino dish
cooked with chicken, tamarind and vegetables.
I love cooking/eating Sinampalukang Manok
specially during rainy season.
Here's my simple yet delicious recipe..
1/2 kiLo chicken - cut into serving pieces
2 tbs cooking oil
3 gloves garlic - chopped
1 onion - chopped
1 thumb-sized ginger - sliced
2 pcs medium tomatoes - quartered
5 cups water
1 pack sinigang mix powder
1 pc chicken cube
2 pieces taro (gabi) - quartered
3 pcs green chili/siling haba
2 pcs eggplants - cut into serving pieces
1 bundle water spinach/kangkong - cut into 2"
1 banana heart/puso ng saging - cut into serving pieces
fish sauce or salt to taste
In a cooking pot, heat cooking oil.
Saute garlic, onion, ginger & tomatoes.
Add the chicken & cook until chicken turns light brown.
Add fish sauce & chicken cube then stir.
Pour in water, add taro/gabi & let it boil.
Add tamarind leaves & sinigang mix powder
then simmer until chicken becomes tender.
Add banana heart (puso ng saging) & eggplant then cook for 3 minutes.
Add water spinach (kangkong) & and let it cook for a minute.
It's done! Enjoy your Sinampalukang Manok with hot rice! ^_^
